Spring Rolls!

I made Goi Cuon for the first time on my own today. Goi Cuon is Vietnamese for spring rolls. Becca was just saying how she wanted to learn to make them. I don't know what carried me on the whim, but I decided to just go with her to Buford to show her how to buy ingredients and make them. I'm glad I did, cuz it was a yummy and fresh dinner tonight. I can't believe I actually pulled it off, cuz Philip says I'm not a really good cook hahaha. WELL HE JUST HASN'T SEEN ME REALLY TRY! =D Maybe it's just Vietnamese food I'm good at cooking because I understand the taste haha. My peanut-dipping sauce turned out soooo good too, it really surprised me! Making spring rolls isn't really cooking though so I guess I've yet to prove I can cook. Anyway...

First I boiled water to cook the vermicelli, pork, and shrimp



As the shrimp turned orange, I took them out



Vermicelli, drained, rinsed, and ready



Peeled the shrimp and took out the shrimp poop



Made the surprisingly good peanut-hoison dipping sauce



Got all the ingredients ready



Prepared to start rollin'



Did that about 15 times and voila!

"a dream is a wish your heart makes"

I had a dream last night that I was woken up by a call around 7:30am and was told that Morehouse School of Medicine had decided to invite me to an interview. I WAS SO HAPPY!

Too bad it was just a dream. Now if only dreams come true... "a dream is a wish your heart makes"

I probably had that dream because Morehouse was on my mind. I visited Morehouse yesterday and talked to the director of admissions for about an hour. It was a great conversation and I ended in all smiles! I heard he doesn't have any role in decisions of acceptances or interviews though. This whole medical school application process is really tough. There are so many people in the same shoes I'm in. How could I possibly stand out when schools have just a 10% acceptance rate? I think it's just all about perseverance and believing in yourself. One day I'll get there. That's a promise.

AUC

I missed a call this morning and listened to my voicemail. It was a call from AUC. I wonder what they wanted. I didn't get to call back, cuz I was listening to the voicemail on my way to class. I wanted to make sure I had a paper and pen just in case I had to jot anything down. So all during class I kept wondering what they'd possibly want. The voicemail was just, "Hey Jacinta, this is Jenny something, I'm calling you in regards to your application to AUC, please give me a call back..."

I'm just hoping it's good news hahaha but that's super wishful thinking. It's way too early to receive any good news. I don't even know if my transcripts or letters of recommendations have made its way yet.

I called back after class around 3pm, but was led to her voicemail. She hasn't called me back. Gosh, just wondering what she wants! I bet she's just calling to say, "I'm here to guide you throughout this process" hahaha and that's it. Oh well, at least it can't possibly be bad news, can it?

I slept in today. I woke up around 12noon to go get 2" by 2" photos of me to send off to SABA University. I usually do quick photo developments at Eckerd (oops I mean Rite Aid... but I still call it Eckerd), but they don't do 2"by2" prints and I was told CVS does! I like CVS. I think it's my favorite of all the drug stores. Anyway, I stayed there for almost an hour. WHY??? I dunno why, but I got caught up with picking nail polish. They were on sale and I kept wanting to get one... then telling myself, no I don't need a new color. Haha well, I ended up buying a cherry red. =D

And I also printed this!

Don't I look professional? I can't wait to actually be professional. This was actually taken last year for last year's round of applications. I couldn't use this year's picture because for some reason it wouldn't turn out right at CVS.

Went to TJ Maxx to find clothes for Fall but didn't end up buying anything but shampoo. It smells so gooooood.

Gotta study some neurobiology now.

update!

I don't know what to write about. I just wanted to update!

I'm still taking post-bacc classes at Georgia State. It annoys me mainly because of the parking situation. I hate parking at Turner Field ughhh. I hate riding the bus. I try to park at the meters as much as possible. I mean, in the end, paying for the meters is cheaper than a parking pass at Georgia Tech (which I heard is $600 this year!). Turner field is free yeah, but I still hate it. It's so crowded!

I've finished all my applications to medical school! I've applied to a buncha schools in the U.S. as well as the 4 top schools in the Caribbeans. I really hope to get in somewhere. I don't care what school I go to, once I get in, it's all up to me to pass the USMLE. If I get into one of the Caribbean schools, at least I'll have a year round tan =)

My nephew Ralphie is just SO CUTE. He makes weekends 500% better when I see him. He's so spoiled, not just by his parents, but aunts, uncles, and even grandaunts, let alone grandparents! He's just a little one right now, but I can't believe in the long run he'll be the oldest of the bunch (of his generation).

And lastly, I've been watching a lot of TV shows just cuz I got the time! GOSSIP GIRL is my favorite right now. I love Ed Westwick, who plays Chuck Bass. I gotta admit, I've never been a fan of the British accent, but after hearing him, I looooove it.

Flashforward is interesting too. Only seen the premier so far.. looks pretty good.

And lastly, THE OFFICE! I'm kinda late on this one. All my cousins watched it ever since it came out and when we get together all I hear are quotes from it. They show old episodes more often now and Philip and I've been watching them all. Hilarious! Can't believe I've been missing out!
(Philip just found out that "that's what she said" came from The Office haha. At least I knew that!)
